Sorry guys! Another late day. And boy are Anna and I tired. We planned on going to bed early tonight, and it's already 10 pm. Oops! I'll have more to post tomorrow. But it's off to bed and time to read--I got 6 books from the library to read in preparation for my next stage of this journey (seriously not trying to tease you guys!)
And boy, I really want to eat. But it's after 8, so I guess it's off to bed for me. I guess I'll just enjoy my bagel breakfast sandwich all the more in the morning, huh??
Looks like I'll have to do a nice long walk/run tomorrow night to wrap up the week. Haven't had one of those for a while. Should be interesting! What do you think? 8 miles? If you all tell me to, I'll do it!

Eight miles is nothing...you can do that with your eyes closed. LOL! Eight miles will be an awesome achievement and I know you can do it.
I am posting my recipes here. Both are very simple and require minimal work...just the way I like it.
Salmon Salad
can of drained salmon
chopped up dill pickle
small bit of chopped up red or green onion
olive oil mayo (I use full fat as the lower fat one has sugar)
sea salt
black pepper
Mix and enjoy.
Cabbage and Vegetable Soup
I do this in a crock pot but I am sure you could do it on the stove too.
one box of Campbell's low sodium beef broth
one big can of diced tomatoes
two celery ribs chopped
one onion chopped
one zucchini cut into half moon slices
quarter of a small cabbage finely chopped (you can use some coleslaw mix as well but I don't eat carrots anymore and hate picking them out)
sea salt
black pepper
dried parsley
Toss it all in the crock pot, let it cook for about six hours. I let it cool, put it in freezer dishes and voila! Lunches for the next week.
I love the simple taste of all the veg, but if you wanted to spice it up you could use fresh chopped garlic, and dried basil and oregano.

8 miles! That would be a great walk. 8 miles is my longest distance so far on my elliptical it took me over an hour and a half, but was a great workout. Have a good weekend!
